Supersonic flows are widely used in physics and chemistry, most often to cool gases at low or very low temperature as in the CRESU experiment ( wikipedia & history). The Aerodynamic chopper shown in the home movie was primitively designed for this purpose. It presents great advantages in respect of conventional pulsed valve, allowing the use of a large quiet reservoir with a much wider range of stagnation temperature.
